This is my family's favorite birthday cake AND the cake my grandson and I make when he comes to visit! It is so moist and delicious. It's even great without frosting!

CAKE
2 cup(s) all purpose flour
1 1/2 cup(s) sugar
2 tablespoon(s) cocoa (heaping)
1 teaspoon(s) salt
2 teaspoon(s) baking soda
1 cup(s) warm water
1 cup(s) miracle whip (regular or light)
1 teaspoon(s) vanilla extract
CHOCOLATE BUTTER CREAM FROSTING
2 tablespoon(s) cocoa (heaping)
- water to make a paste
1 stick(s) butter or margarine, softened
1 pound(s) powdered sugar
1 teaspoon(s) vanilla extract

Steps:

  • First mix dry ingredients in mixing bowl. Then add water, Miracle Whip, and vanilla. Mix well. Pour into greased 9x13 baking pan. Bake at 350 degrees for 30 minutes. Cool before frosting.
  • For Chocolate Butter Cream Frosting, put cocoa in a coffee cup, add just enough water to make a paste. Add chocolate paste to softened creamed butter in mixing bowl and mix until smooth. Add powdered sugar a little at a time until you get the consistency you like. Don't forget to scrape the sides of the bowl with a spatula. Then add the vanilla. (If you just want the butter cream frosting, then leave out the cocoa and water mixture.)
  • If you like cream cheese frosting, you can substitute cream cheese for half of the butter. For a lighter calorie frosting, use light cream cheese! It's delicious!
