Rustic Stewed Cube Steak over rice or pasta image

Never know what to do with Cube Steak except make Chicken Fried Steak, so this is what I came up with.

Number Of Ingredients 15

4 cube steak patties
1 medium sweet onion, sliced
1 c carrots, chopped
1 c celery, finely chopped
3 clove garlic, very finely chopped or crushed
2 bay leaves
olive oil
SAUCE
1 15 oz can, diced tomatoes w/oregano, basil and garlic, no salt added
1 c beef stock, homemade/low sodium
2 c mushrooms, sliced
1 tsp balasamic vinegar
1 tsp ea. cumin, garlic pwd, onion pwd, black pepper
1 tsp worcestershire sauce
long grain or brown rice or noodles

Steps:

  • 1. Season cube steak with garlic pwd, onion pwd, black pepper, then lightly flour, the set aside.
  • 2. In a deep skillet or a pot, add about 1/4 c. of olive oil, carrots, celery, onions, and garlic. Simmer, stirring often until tender. Move veggies to the side, add a little more olive oil if necessary, add cube steak and brown on each side.
  • 3. Once meat is brown, add tomatoes, beef stock, cumin, garlic pwd., onion pwd, pepper, balsamic vinegar, worschestshire sauce,two bay leaves and salt. Cover and simmer for about 30. Add mushrooms, cover and simmer thirty minutes more. Turn meat half way through.
  • 4. Serve over hot rice or buttered pasta
