Rosemary Garlic Fingerling Potatoes image

Potatoes and rosemary are the best combo ever and this is a quick and easy side dish full of flavor. Hope you enjoy!

Number Of Ingredients 7

2 pound(s) fingerling medley potatoes, sliced length wise
1 - (16-oz) pkg mushrooms, fresh sliced or whole
3 - green onions, snipped
1 teaspoon(s) rosemary garlic seasoning
1 teaspoon(s) kosher salt, coarse
1/4 teaspoon(s) pepper
2 tablespoon(s) white truffle oil

Steps:

  • Preheat oven to 400 degrees.
  • Slice potatoes length wise, rinse. Place in a mixing bowl or ziploc bag, sprinkle with seasonings. Drizzle with oil and toss to combine.
  • Place potatoes in baking dish, cover and bake for 40 to 45 minutes or until potatoes are tender.
