Roman Apple Cake image

I often take this to pot lucks and it is a family favorite. This is great as a coffee cake or a dessert. I like to use a tart apple for this cake (Granny Smith or Northern spy's are best). CAKE
1 c shortening
1 c white sugar
1 c brown sugar
2 eggs
1 c butter milk or sour milk
1 tsp soda
2 c flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
2 c peeled & chopped apples
1/2 c chopped nuts
TOPPING
1/4 c sugar
1/2 tsp cinnamon
1/2 c chopped nuts

Steps:

  • 1. Cream together shortening and sugars.
  • 2. Beat in eggs.
  • 3. Beat milk with soda mixed in, add to beaten mixture.
  • 4. Sift together flour, baking powder, salt and cinnamon and add to creamed mixture.
  • 5. Fold chopped apples and nuts into cake mixture. Pour into oblong 9" X 13" greased and floured pan.
  • 6. Mix together topping ingredients. Sprinkle over top of cake.
  • 7. Bake at 350 degrees for 55 minutes
