ROASTED VEGETABLES (FROM INA GARTEN) image

Number Of Ingredients 6

5 LBS of select vegetables (squash, egg plant, zuccini, carrots, sweet potato, peppers, etc.)
3 TBS Olive Oil
1 1/2 TSP Salt
1/2 TSP Pepper
1/2 TSP Garlic Powder (if desired)
2 TBS Chopped Parsley (if desired)

Steps:

  • Preheat oven to 425 degrees Cut vegetables into 1 to 1 1/4 inch cubes (will shrink during cooking so don't make too small Place vegetables into bowl and toss to coat with olive oil (or...spread on baking sheet and drizzle with olive oil) Spread vegetables on baking sheets Salt and Pepper vegetables (sprinkle garlic powder if desired) Bake 25 to 35 minutes until the vegetables are tender, turning once with a spatula Sprinkle with parsley (if desired) and serve
