This is a wonderful recipe for basic roasted zucchini and tomatoes. I've served it as a vegetable side dish as well as spooned over cooked spaghetti noodles.

Steps:
- 1. Preheat oven to 450°F. Line a small baking sheet with aluminum foil (for easy clean-up), and lightly mist the foil with the cooking spray.
- 2. Place tomatoes and zucchini on baking sheet, and lightly mist with the cooking spray. Then sprinkle the sea salt evenly over the vegetables.
- 3. Roast in oven until vegetables start to lightly char, about 15-20 minutes. Serve immediately.
