ROASTED TOMATO SOUP image

Number Of Ingredients 8

Soup
40 roasted plum tomato halves (directions follow)
2 t oil
1 onion chopped
4 C chicken stock
2 t sugar
Chopped fresh basil
Salt & Pepper

Steps:

  • Slice plum tomatoes in half lengthwise, arrange cut side up on foil lined baking sheet. Drizzle oil on tomatoes, sprinkle with herbs, salt, and pepper. Bake at 400F until softened and shriveled and edges begin to darken, about one hour. In large saucepan, heat oil over medium heat, cook onion until softened. Add tomatoes stock, and sugar. Bring to boil then simmer 15 min. Blend until smooth. Return to saucepan, stir in basil, check for salt & pepper.
