Number Of Ingredients 8

3 medium Beets (golden),quartered
3 large Yukon Gold potatoes,quartered
3 large Carrots, cut into 2" long pieces
3 large Garlic cloves (smashed)
2 tbsp. Olive oil
1 tbsp. chopped fresh Rosemary
1 bay leaf.
Salt & pepper to taste

Steps:

  • Peel the vegetables (potatoes can have skin if preffered. mix all ingredients in large bowl. roast in a single layer in a shallow pan at 375 degrees for 1 hr. or until vegetables have browned at the edges.
