Delicious side dish to accompany your holiday meal. Roasting the sweet potatoes caramelizes the natural sugars and makes it extra sweet without adding sugar. The orange zest just takes it to the next level.

Steps:
- 1. Preheat oven to 400 degrees
- 2. Wash sweet potatoes Cut sweet potatoes in half length wise Lay sweet potatoes on rimmed baking sheet
- 3. Drizzle oil over sweet potatoes Sprinkle salt over sweet potatoes Rub sweet potatoes all over with oil and salt
- 4. Lay sweet potatoes flesh side down on baking sheet Roast in preheated oven 30-45 min. til tender
- 5. Remove from oven and let cool until you can handle them Remove skin from sweet potatoes Place sweet potatoes in bowl Add stick of butter Add all of zest from one orange Squeeze juice from same orange into bowl Mash sweet potatoes Add salt to taste.
