Roasted New Potato Salad image

This is another great potato salad for a bbq.

Number Of Ingredients 10

2 Tbsp olive oil
2 lb small red potatoes, diced
1/2 medium sweet onion, chopped
2 tsp minced garlic
1 tsp coarse salt
1/2 tsp freshly ground pepper
8 to 10 cooked crisp bacon slices, crumbled
1 bunch green onions, chopped
3/4 c prepared ranch dressing
salt and pepper to taste

Steps:

  • 1. Preheat oven to 425F. Place oil in a 15x10 inch jelly roll pan; add potatoes and next 5 ingredients, toss to coat. Arrange the mixture in a single layer.
  • 2. Bake for 30 to 35 minutes or until potatoes are tender, or 40 to 45 minutes for crispier potatoes (this is my preference) stirring occasionally. Then transfer potatoes to a large bowl.
  • 3. Toss potatoes, bacon, green onions, and dressing. Salt and pepper to taste. Serve immediately or cover and chill until ready to serve. 4-6 servings
