ROASTED DILL CARROTS image

Number Of Ingredients 4

1 kg carrots, peeled and cut on an angle into 1cm slices
2 cloves garlic, finely chopped
2 tbsp Coles pure olive oil
2 tbsp roughly chopped fresh dill

Steps:

  • 1. Preheat oven to 190ÂșC and place baking sheet inside to preheat. 2. In a large mixing bowl toss carrots with garlic and oil and season to taste with salt and pepper. 3. Place carrots on preheated tray in a single layer and roast in oven for about 12-15 minutes or until carrots are tender and have just begun to brown. 4. Remove from oven and let sit for 5 minutes to cool. 5. Transfer to large mixing bowl and toss with dill. 6. Place the carrots on a large platter and serve warm or at room temperature.
