Roasted Curry Daikon Radish image

My spicy & tasty oven roasted daikon radish is a great substitute for oven roasted potatoes if your are looking for a less starchy side dish. Cooking with Love & Passion sw :)

Number Of Ingredients 9

1 1/2 lb daikon radish, cut into 1/2' pieces
3 thai chili peppers, chopped
1/4 c olive oil, extra virgin
1 Tbsp curry powder
1 1/2 Tbsp kosher salt
1/2 tsp granulated garlic
1/4 tsp granulated onion
1/8 tsp true lemon
chopped parsley & green onion for garnish

Steps:

  • 1. Preheat oven to 400°.
  • 2. Combine all ingredients in a medium bowl; toss to coat. Let stand for at least 15 minutes.
  • 3. Arrange radish pieces in a single layer on a cookie on a sheet; bake for 25-30 minutes or until golden brown.
  • 4. Flip once during baking time. Garnish with parsley & green onion. **adjust seasoning to taste**
