ROASTED CHICKEN AND CARROTS WITH OLIVES AND LEMON image

Number Of Ingredients 8

4lb chicken thighs
2lb carrots cut into 2in pieces
1/2 cup kalamata olives, pitted
4 bay leaves
1 lemon cut into wedges
2 tbsp olive oil
salt, pepper
1 tsp paprika

Steps:

  • Heat oven to 425F. On a large rimmed baking sheet, toss the chicken, carrots, olives, bay leaves, lemon, oil, 1 tsp salt, and 1/4 tsp pepper. Arrange in a single layer and sprinkle chicken with paprika. Roast, tossing the vegies once, until the chicken is cooked thru and the carrots are tender, about 45-50 minutes.
