Steps:
- Preheat oven to 400 degrees.
- Slice head of cauliflower into 1/2 inch steaks. Place on baking sheet lines with parchment paper. Scatter remaining florets around cauliflower slices.
- Coarsely chop green olives and parsley.
- Combine all ingredients (except cauliflower and parmesan) into a small bowl.
- Drizzle mix over cauliflower steaks. Spread evenly.
- Roast cauliflower for 35 minutes.
- Sprinkle parmesan over steaks. Roast for an additional 5 minutes, or until parmesan is browned.
