Roasted Cauliflower Head image

Number Of Ingredients 9

1 head Cauliflower
1/2 cup Arugula
1/4 cup olive oil
1 pinch salt and pepper
1/2 cup Chopped watercress
2 teaspoon Chopped garlic
2 teaspoon Lemon zest
1/2 cup olive oil (second amount)
1/2 cup grated parmesan

Steps:

  • Preheat oven to 450
  • Rub olive oil and salt and pepper over cauliflower head that has been cored.
  • Bake cauliflower for 50 minutes until a toothpick goes easily through the head.
  • Place arugula, watercress, garlic and lemon zest in the blender. start blending and pour in second quantity of olive oil.
  • Mix half of the parmesan with the vinaigrette and pour over over baked cauliflower. Top with remaining cheese. Garnish with watercress.
