Roasted Carrots with Garlic and Olives image

Number Of Ingredients 5

8 medium carrots, peeled and cut diagonally into 1/2-inch thick slices
2 tablespoons olive oil
3 cloves garlic, sliced
salt and freshly ground black pepper
1/2 cup pitted imported mild black olives, such as Gaeta

Steps:

  • 1 Place a rack in the center of the oven. Preheat the oven to 425°F. In a large baking pan, toss the carrots with the oil, garlic, and salt and pepper to taste. 2 Roast 15 minutes.
