Roasted Brussels Sprouts with Grapes image

Number Of Ingredients 10

2 pounds Brussels sprouts, trimmed & halved or quartered
2 tablespoon EV Olive oil
1 dash kosher salt
1 dash freshly ground pepper
2 tablespoon butter
2 cups seedless grapes
2 teaspoon fresh thyme
1 bunch scallions, finely chopped
2 tablespoons honey
1/4 cup chopped hazelnuts

Steps:

  • Put a baking sheet on the middle rack of the oven and preheat oven to 450.
  • Toss Brussels sprouts with olive oil, salt & pepper in a large bowl.
  • Arrange sprouts on hot baking sheet and roast for 20-25 minutes, turning at mid way point.
  • Meanwhile, melt butter in large skillet. Add thyme and grapes until grapes start to burst, about 4 minutes.
  • Add scallions and honey. Bring mixture to a boil. Reduce heat and simmer until juices thicken.
  • Season with salt and pepper.
  • Plate sprouts and pour grape & honey mixture on top. Sprinkle with hazelnuts
