ROASTED ASPARAGUS SALAD image

Grated rind of 1 lemon
1 tablespoon lemon juice
½ teaspoon Dijon mustard
Salt and pepper, to taste
4 tablespoons olive oil
1 bunch asparagus, stem ends snapped off
4 ounces baby arugula
1 tablespoon capers, rinsed
2 ounce piece Parmesan, shaved into strips

Steps:

  • 1. Set the broiler on high. Have on hand a rimmed baking sheet. 2. In a large bowl, combine the lemon rind and juice, mustard, and a sprinkle of salt and pepper. Slowly whisk in 3 tablespoons of olive oil. 3. Place the asparagus on the baking sheet and sprinkle with the remaining 1 tablespoon oil, salt, and pepper. 4. Broil the asparagus for 4 to 5 minutes or until browned in spots, but still crisp-tender. 5. Meanwhile, add the arugula to lemon dressing and toss to coat. 6. Arrange asparagus on a serving plate, top with arugula salad, and sprinkle with capers and shaved Parmesan. Adapted from 80 Thoreau
