ROAST BEEF WITH GRAVY image

Yield 6-8 people

Number Of Ingredients 6

Roast, 3-5 lbs. Black angus is best. Look for a rump or sirloin tip.
Butter, 2 tb. soften
Salt, kosher 2-2 t.
Fresh ground pepper
Flour, 1/4 c.
Water, 3 c.

Steps:

  • Pre heat oven to 425. Rub butter on roast, salt and pepper. Place roast in oven un-covered. After 20 minutes reduce heat to 375. Cook roast for a total of 15 minutes per pound. (A 4lb roast will take about 1 hr.)If you use an instant read therometer remove when internal temp is 118 degrees for med rare. Let rest for at least 15 minutes. After removing roast, and potatos, if you are making any, add water to pan and deglaze. You might need to add some beef bouilion cubes if the roast doesn't produce alot of pan drippings( If you roast potatos you will find that the potatos absorb some of the juices) Bring to boil then simmer Mix the four in a jar with some water until smooth, no lumps. Add to roasting pan, whisking, to thicken gravy. Salt and pepper to taste.
