Roast Beef Hash image

Number Of Ingredients 5

2 to 3 tablespoons butter
1 onion, finely chopped
1 cup chopped, cooked beef tenderloin roast
2 cups beef broth (or leftover au jus from roast)
1 large potato, peeled, cubed

Steps:

  • Melt butter in a 10-inch skillet. Cook onion and roast till onion is soft. Add boiling beef broth (or au jus) and potato. Lower heat, cover skillet, and allow ingredients to cook slowly until tender. Serve over rice, toast, or biscuits.
