Ritzy broccoli casserole image

My dad would make this to go along w/ a roast beef. Plus this is one way the kids would eat their veggies, lol. It's that good!

Number Of Ingredients 9

2 10 oz boxes frozen chopped broccoli
1 can(s) fat-free cream of mushroom soup
1 c shredded cheddar cheese, i used reduced-fat
1 Tbsp minced onion
2 eggs, beaten
1 c mayonnaise, i used light
salt and pepper to taste
1 c crushed ritz crackers, i used reduced-fat
2-3 Tbsp melted butter

Steps:

  • 1. Heat oven to 350. Lightly spray casserole dish w/ cooking spray. In a microwaveable bowl, microwave broccoli w/ about 1/4 cup water, until tender, but still has some crunch to it. Drain well.
  • 2. In bowl, mix together broccoli, soup, cheese, onion, eggs, mayo, salt and pepper. Mix well. Spoon into casserole dish.
  • 3. Sprinkle top of casserole w/ cracker crumbs. Drizzle w/ butter. Bake 45 mins or until bubbly. Can tent w/ foil if top is cooking to fast, but take the foil off the last 10 mins.
