- In large bowl, combine dry. Stir in carrot, raisins, walnuts, coconut & apple. Beat eggs, oil & vanilla. Stir into flour mixture til batter is just combined. Spoon into well greased muffin cups, filling to top. Bake at 350F for 25-30 mins.
