Rice Croquettes image

Number Of Ingredients 12

2 cups Rice, cooked (3/4 cup uncooked)
2 Egg yolks, well-beaten
1 teaspoon Salt
1/8 teaspoon Cayenne Pepper
1 cup Cheese, American - grated
2 Egg whites, slightly beaten
1 cup Dry bread crumbs
1 WHITE SAUCE
4 tablespoons Butter
4 tablespoons Flour
1 cup Milk
1 can Tomato soup

Steps:

  • Combine rice, egg yolks, seasoning, cheese and white sauce (flour, butter, milk)
  • Chill on plate - overnight
  • Shape in balls
  • Dip in egg whites, then in bread crumbs
  • Fry in 375 fat until golden
  • Serve hot with undiluted tomato soup as sauce
