Rhubarb Spice Cake image

1/2 cup(s) butter, softened
1 1/2 cup(s) dark brown sugar, packed
2 teaspoon(s) vanilla
2 cup(s) flour
1 1/2 teaspoon(s) cinnamon
1 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1/4 teaspoon(s) ground allspice
1/4 teaspoon(s) ground cloves
1 cup(s) buttermilk
2 cup(s) rhubarb, finely chopped
TOPPING:
1/2 cup(s) sugar
1/2 cup(s) flaked coconut
1/2 cup(s) pecans, chopped
1 teaspoon(s) cinnamon

Steps:

  • Preheat oven 350. In a mixer add butter and brown sugar; beat. Add egg and vanilla; beat. Add buttermilk; beat. Add baking soda, salt and spices; beat. Add flour; beat until smooth. Add rhubarb; stir. Pour batter in greased 9x13 pan.
  • In a separate bowl add sugar, coconut, pecans and cinnamon; stir. Sprinkle the coconut topping evenly over the top of the cake.
  • Bake 35-45 minutes; test with a toothpick for doneness.
