Steps:
- Preheat oven at 350 degrees. Beat sugar, oil, and egg. Add vanilla and salt. Mix baking soda into sour cream. Add to first mixture. Add flour, rhubarb, and nuts.
- Pour into two standard loaf pans. Mix sugar and butter together, then sprinkle over tops of bread.
- Bake for 1 hour. Cool before slicing.
