Rhubarb Lemon Bar image

Number Of Ingredients 11

1 cup All Purpose Flour
1/2 cup Wheat Flour
1 1/2 sticks Butter, cold and cubed
1/3 cup Sugar
10 ounces Rhubarb
3/4 cup Sugar
4 l Eggs
2 tablespoons Lemon Juice
3 tablespoons All purpose flour
1 tablespoons Lemon Zest
1 pinch salt

Steps:

  • Preheat oven to 325
  • Combine first 4 ingredients in food processor, blend until dough comes together. Press firmly into 8x8 parchment lined pan and bake 30-35 minutes unitl brown around the edges.
  • Combine 1/2 cup sugar and chopped rhubarb in a saucepan over medium heat. Simmer unitl completely broken down, 10-15 minutes stiring frequently. Set aside to cool.
  • Combine remaining ingredients in food processor. Pulse to break up eggs. Add rhubarb mixture. Pulse to combine. Bake at 350 for 35-40 minutes until puffy and set.
  • Cool completely in pan on a wire rack before lifting out to cut and serve.
