Rhubarb Crisp image

Springtime calls for rhubarb recipes! I have several but this is one of my favorites. I make this when I don't have time to make a pie crust.

Number Of Ingredients 9

8 cup(s) fresh rhubarb, washed and sliced into 1/2 inch pieces
2/3 cup(s) white sugar
4 tablespoon(s) dry strawberry jello powder
1 cup(s) white flour
1/2 cup(s) brown sugar
1/2 teaspoon(s) cinnamon, ground
1 1/2 stick(s) butter, softened
2 cup(s) old fashioned oatmeal,
1/2 cup(s) broken pecan pieces

Steps:

  • In a large bowl, combine the diced rhubarb, jello and white sugar. Mix well and set aside.
  • In another bowl, combine flour, oats, pecans and cinnamon. Add softened butter and mix well.
  • In a glass 9 x 13 inch dish, add the rhubarb mixture, spreading evenly. Top with the oatmeal mixture, spreading this evenly over the rhubarb.
  • Bake in a preheated 350 degree oven, uncovered for 45 minutes.
