Red Miso Soup image

Easy and super fast delicious comforting soup. Vegan too.

Number Of Ingredients 6

4 c dashi stock
1 c fresh shiitake mushrooms stemmed and thinly sliced
1/4 c chopped dried seaweed
4 Tbsp red miso paste
4 oz tofu cut into small chunks
3 scallions chopped

Steps:

  • 1. Bring the stock to a simmer over medium heat and whisk in the red miso until it is dissolved. Add the mushrooms and seaweed and cook about 5 minutes until softened.
  • 2. Add tofu and scallions and cook about 1 more minute.
