When I was a young bride in Texas during the 60's you'd be hard pressed to come to any Texas kitchen and not find a pot of red beans either cooking or in the refrigerator. This recipe comes from a cookbook that I recieved at my wedding shower in 1966 and comes from the depression era when chocolate was not easy to come by so...

Number Of Ingredients 9

1 c red beans
3/4 c sugar
2 Tbsp flour
2 eggs, separated
1/4 c milk (canned milk is good)
1/4 c shredded coconut
1 tsp vanilla
2 Tbsp butter
1/2 tsp salt

Steps:

  • 1. Mash cooked beans. Combine sugar, salt and flour. Add beaten yolks, milk and beans. Cook until thick. Add butter, vanilla and coconut. Make meringue with egg whites. Pour filling into baked shell, top with meringue. Cook in slow oven til meringue is brown.
