Really Good BBQed Meatloaf image

I haaaaated meatloaf when I was a kid. I only just started liking it a few years ago when I decided it was time to find something that worked for me. I doctored a recipe that I found on the side of a box, and this is the result. Now I actually crave it!! (I make another meatloaf that is equally as good, and I'll post that recipe, too.)So, if you're a meatloaf hater too, give this one a shot. ;) (photo from bing images)

Number Of Ingredients 8

2 lbs. - lean ground beef
1 (6 oz.) - box stovetop beef stuffing, crush with rolling pin into coarse crumbs
3/4 cup - beef bouillon, i use superior touch better than bouillon beef base (1 tsp.)
2 - eggs, lightly beaten
1 (6 oz.) - can crushed pineapple, drained
- coarse ground black pepper
1 cup - sweet baby ray's barbeque sauce, divided
1/2 cup - ketchup

Steps:

  • Preheat oven to 350º. Mix beef, stuffing mix, broth, eggs, pineapple and ½ cup bbq sauce. Shape into loaf, place on greased or foil-lined baking sheet, or shallow baking dish. Sprinkle top with coarse ground pepper. Bake for about 1 1/2 hours or til no longer pink in center. Coat loaf with ½ cup bbq sauce and ½ cup ketchup mixed well, during last 5 minutes of baking time. Let rest 5-10 minutes before slicing.
