RASPBERRY CLAFOUTIS image

1/2 c all-purpose flour
1/4 c plus 2 T sugar
Salt
3 large eggs
3 T butter, melted
Finely grated zest of 1 lemon
1/4 c plus 2 T milk
1-1/2 pints raspberries (3 c)
Confectioners' sugar

Steps:

  • Preheat oven to 350. Butter 9-inch gratin dish/pie plate. In bowl, whisk together flour, sugar, pinch of salt. Whisk in eggs, butter and lemon zest until smooth. Add milk and whisk until light and very smooth, about 3 minutes. Pour batter into gratin dish and top with raspberries. Bake about 30 minutes, till set and golden. Let cool slightly. Dust with confectioners' sugar, cut into wedges, and serve.
