Raisin-Filled Cereal Bars image

I remember eating these at school, they were sweet, warm and chewy. Found this recipe in an old Better Homes and Garden Cook Book I found.

3/4 cup(s) butter, softened
1 cup(s) brown sugar, firmly packed
2 cup(s) all purpose flour
1/2 teaspoon(s) baking soda
1 1/2 cup(s) granola cereal

Steps:

  • Raisin Filling: Mix 1/2 cup granulated sugar and 1 tablespoon cornstarch. Stir in 2 cups raisins and 1 cup water. Cook and stir over medium heat till thickened and bubbly. Remove from heat; stir in 2 tablespoons lemon juice. Set aside and let cool.
  • Cream butter and sugar. Stir together flour and soda. add to creamed mixture with granola; mix well. (mixture will be crumbly.) Pat half into greased and floured 13x9x2-inch baking pan. Spread with filling. Add 1 tablespoon water to remaining crumb mixture; sprinkle atop filling. Lightly press with hand. Bake at 350 for 30-35 minutes. Cut into bars while warm. Makes 32.
