Steps:
- 1. Saute garlic and onion with olive oil for about 3 minutes, until onion is tender. Add red quinoa and stir until well coated. Add win and stir for about 1 minute. 2. Add the stock, lemon juice, green beans, tomatoes and thyme. Cover, bring to boil, then lower heat and cook until beans and quinoa are soft, stirring occasionally, about 20 minutes. 3. Remove lid and let cook another 5 minutes so the grain can finish absorbing most of the liquid.
