Steps:
- 1) Heat oil in a medium saucepan over med. heat. Stir in onion first, then garlic, & sauté until lightly browned 2) Mix the quinoa into the saucepan & cover with vegetable broth. Season with cumin, cayenne, salt & pepper. Bring to a boil. Cover, reduce hit & simmer 20 minutes. 3) If using frozen corn, stir it in & simmer 5 min until heated through. Mix in black beans & cilantro (for canned corn, add with beans.)
