Quick Lemon Cheesecake image

CRUST:
1 1/4 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons melted butter

FILLING:
1 (8-ounce) package cream cheese, softened
2 cups milk, divided
1 tablespoon sugar
1/2 teaspoon vanilla extract
1 (3 3/4-ounce) package instant lemon pudding mix

Steps:

  • Crust: Combine crumbs, sugar, and butter. Press firmly on bottom and sides of an 8-inch square pan or 9-inch round pie pan. Chill while preparing filling. Filling: Beat cream cheese until soft. Blend in 1/2 cup milk. Add remaining milk, sugar, vanilla, and pudding mix; mix well. Pour into crust. Chill until firm. Garnish with whipped cream and strawberries or cherries.
