Quick & Easy Tomatillo Sauce image

A quick and easy sauce to use on chicken enchiladas or other mexican dishes.

Number Of Ingredients 7

4 medium tomatillos, peeled
1 canned chipotle pepper (packed in adobo sauce)
2 small (or 1 medium) onions, peeled
3 clove(s) garlic, peeled
1 teaspoon(s) sugar or honey
1/4 bunch(es) fresh cilantro, chopped
salt & pepper to taste

Steps:

  • Cover the tomatillos, pepper and onion with water and boil 5 minutes or until soft and tender.
  • Drain liquid and combine with remaining ingredients in a blender and blend well. Taste and adjust seasonings.
  • Excellent on chicken enchiladas or for tacos.
