Steps:
- Stir fry ginger with a tablespoon of olive oil in a small pot until fragrant. Add a pinch of salt, coconut milk and water to the pot and bring it to a boil. Cover the pot. Turn down the heat to low and let it simmer for about 10 to 15 minutes. Make sure you have just enough liquid to wet the rice. Add the rice to the pot. At this time, the rice will wet but not watery. Turn the heat to medium and stir the rice for 5 minutes, until the liquid dries off a little. The rice will be fluffy and moist but not overly dry when it's done.
