Quick & Easy Banana Nut Bread image

This is a good quick bread that I have made since 1967 when I was a newly wed. I had never had homemade quick breads before that time and an Army Wife introduced me to them and the rest is history. Number Of Ingredients 8

1 c granulated sugar
2 bananas, ripened
3/4 c unsalted butter
2 eggs
2 c white flour
1 tsp baking soda
1 tsp vanilla
3/4 c chopped pecans (or walnuts)

Steps:

  • 1. Preheat oven to 350 degrees. Prepare a loaf pan by spraying with non stick cooking spray
  • 2. In a small bowl, mash bananas with the back of a fork until smooth.
  • 3. Cream sugar and butter together until well blended. Add remaining ingredients, mixing well. Pour bread mixture into loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
