Quick Avocado Chicken Salad image

Great way to get your mono-unsaturated fats without a high total fat content!

Number Of Ingredients 10

20 ounces cooked chicken, shredded
½ cup plain fat-free Greek yogurt
¼ cup finely minced onion
¼ cup crumbled cotija cheese
¼ cup chopped fresh cilantro
½ jalapeno pepper, seeded and chopped
1 avocado - peeled, pitted, and diced
½ lime, juiced
1 pinch salt
1 pinch ground cumin

Steps:

  • Stir chicken, yogurt, onion, cotija cheese, cilantro, and jalapeno pepper together in a large bowl. Gently fold avocado into chicken mixture until salad is evenly distributed. Stir lime juice, salt, and cumin into salad.
