Steps:
- 1. Brown sausage in a skillet; drain well. Add onion, bell pepper, celery and rice mix; cook for 2 minutes, stirring constantly.
- 2. Drain tomatoes, reserving liquid. Add enough water combined with tomato juice to make 1 1/2 cups and add to rice/sausage mixture.
- 3. Add tomatoes and bring to a boil. Reduce heat to low and simmer approximately 20 minutes. Add parsley, cover and simmer 5 more minutes or until rice is tender.
