PUMPKIN PIE W/ PECAN CRUST image

1 C graham cracker crumbs
2 T pecans, toasted and ground
1 T unsweetened applesauce
2 whole eggs
1 C canned pumpkin
3/4 C evaporated skim milk
1/4 C apple juice concentrate
1/4 C brown sugar
1/2 t ground cinnamon
1/4 t ground ginger
pinch ground cloves
pinch salt
12 pecan halves
-1 t maple syrup

Steps:

  • 1. Preheat oven to 350. 2. In a M bowl, combine graham cracker crumbs w/ pecans and applesauce. Press into the bottom and halfway up the side of a 9" pie plate, coated w/ a small amount of canola oil. 3. Combine remaining ingredients, except pecan halves and syrup, in a L bowl. Mix until blended. 4. Pour pumpkin mixture into pie crust. 5. Bake for 20 - 30 minutes or until a knife inserted in the middles comes out clean. Refrigerate pie when cool; cut into 12 pieces. 6. In a S bowl, coat pecan halves w/ syrup. Transfer to a lightly oiled baking sheet, reduce heat to 325 and bake for 4 - 5 minutes. Remove from oven. Place one pecan halve on the outer edge of ea slice of pie.
