1/2 cup Onion, chopped
1 Tbs. Olive oil
15 oz. can Pumpkin puree
2 cups low-sodium chicken broth
1 cup water
1/4 cup peanut butter
1/4 tsp. curry powder
1/4 tsp. salt

Steps:

  • Cook onion in heated olive oil on medium heat for 4 minutes, or until tender. Stir in remaining ingredients and heat through.
