Pumpkin pasta sauce image

A creamy pumpkin pasta sauce that goes great over a variety of different pastas. I ate mine with sweet potato gnocchi and loved it!

Number Of Ingredients 14

1/2 can(s) pure pumpkin puree
3/4 can(s) chicken stock
1 tablespoon(s) olive oil
1/2 - large onion, chopped
2 clove(s) garlic, chopped
1 1/2 cup(s) zucchini, chopped
15 - basil leaves, chopped
1 teaspoon(s) dried rosemary, or use fresh
1 teaspoon(s) garlic salt
1 tablespoon(s) garam masala
1 teaspoon(s) oregano
4 tablespoon(s) half & half
- salt and pepper to taste
- pasta of choice

Steps:

  • In a large skillet, saute onion, garlic, and zucchini in olive oil. Let cook for about 5 minutes.
  • Add in pumpkin puree and chicken stock. Cook for several minutes, until the stock and puree are well combined. The sauce should begin to slightly thicken.
  • Add in your spices, rosemary, and basil and let simmer for 15 minutes
  • Cook your choice of pasta on the side.
