PUMPKIN CAKE SQUARES image

Number Of Ingredients 13

1 cup sugar
2 large eggs
1 cup canned pumpkin
1/2 cup vegetable oil
1 cup flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup confectioner's sugar
1/4 cup cream cheese
2 Tbsp softened butter
1/2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 9" square pan. 2. Prepare cake: In bowl, with mixer at medium speed, beat sugar and egg for 2 minutes. Beat in pumpkin and oil. At low speed, add flour, cinnamon, baking soda, baking powder and salt. Beat 1 minute. 3. Pour batter into prepared pan. Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean,. Cool pumpkin cake in the pan on wire rack. 4. Prepare frosting: In bowl, with mixer at low speed, beat confectioner's sugar and remaining ingredients for 2 minutes or until fluffy. Frost the cake.
