PUMPKIN BUTTERSCOTCH COOKIES image

1 1/2 cups sugar
1/2 cup butter, softened
1 egg
1 teaspoon pure vanilla extract
1 cup canned pumpkin
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees. Using a stand mixer with the paddle attachment, cream the sugar and shortening for 3-4 minutes. Mix in the egg, vanilla and pumpkin. In another bowl, combine flour, salt, baking soda, baking powder and cinnamon. Add to pumpkin mixture and mix until just combined. Stir chips in with a spoon. Drop spoonfuls onto sheet pans lined with parchment paper. Bake for about 12-15 minutes.
