Pumpkin Bread Pudding image

I got this from Southern Living and threw it together for a potluck. HUGE success and not to sweet

Number Of Ingredients 11

15 ounce(s) pureed pumpkin
1 cup(s) dried cranberries
3 tablespoon(s) melted butter
1 teaspoon(s) cinnamon
1/2 teaspoon(s) nutmeg
1/2 teaspoon(s) ground ginger
8 ounce(s) french bread torn into chunks
2 cup(s) half and half
2/3 cup(s) sugar
2/3 cup(s) brown sugar
- sugar cinnamon mixture: optional

Steps:

  • butter a 11x7 baking dish. Heat oven to 350
  • pour half and half over bread chunks in a bowl
  • in another bowl, combine eggs, sugars, pumpkin, cranberries, melted butter, spices, and vanilla; blend well. pour pumpkin mixture over bread and mix well.
  • pour into prepared pan, sprinkle with cinnamon and sugar. Bake 45-60 mins
