MIX THESE WET INGREDIENTS IN A SMALL BOWL
2 eggs, slightly beaten
2 cup(s) sugar
1/2 cup(s) oil
1 cup(s) pumpkin, libby's solid pack
MIX DRY INGREDIENTS IN A LARGE BOWL
2 1/4 cup(s) ap flour
1 tablespoon(s) pumpkin pie spice
1 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 cup(s) fresh cranberries (optional)
1 cup(s) pecans (optional)

Steps:

  • PREHEAT OVEN 350
  • ADD WET INGREDIENTS TO THE BOWL OF DRY INGREDIENTS
  • ADD BATTER TO 2 BUTTERED AND FLOURED LOAF PANS. BAKE ABOUT 1 HOUR TILL TOOTHPICK COMES OUT CLEAN
