PUBLIX--CREAMY HORSERADISH PORK image

1 pork tenderloin -about 1 lb
1 t kosher salt
1/2 t pepper
2 T canola oil
3/4 c chicken broth
1 t prepared horseradish
1 T Dijon mustard
1/4 t ground red pepper
1 T fresh chives, finely chopped
1 T butter
2 T half-and-half

Steps:

  • Cut pork into cubes, season with salt and pepper Preheat large sauté pan, then add pork in single layer and cook 3-4 minutes until browned Remove pork from pan Add broth to pan and bring to boil. Whisk in horseradish, mustard and red pepper; cook 3-4 minutes until slightly reduced Remove pan from heat. Whisk in butter, half-and-half and chives. Return pork to pan and reduce heat to low; cook 1-2 more minutes until pork is fully cooked.
