This is my favorite way to serve asparagus; it makes any meal just a little more special. Several stalks of fresh asparagus are wrapped together in a thin slice of prosciutto ham, brushed with extra virgin olive oil, sprinkled with freshly ground black pepper and freshly grated, or shredded, nutty parmesan cheese and roasted until the asparagus is just tender. Each bundle is considered a serving, but don't be surprised when asked if there are "seconds."

Steps:
- Preheat oven to 425 degrees F. Line a baking sheet with heavy duty aluminum foil; set aside.
- Wash asparagus; remove any tough ends; lay on paper towels to dry.
- Gather several stalks together, to form a bundle that is about 1 1/2 inches in diameter. Repeat until you have your desired number of servings, laying the bundles on the foil.
- Wrap 1 slice of prosciutto around the stalks of each bundle of asparagus.
- Generously drizzle bundles with olive oil; use a pastry brush to brush the oil over the entire surfaces of the prosciutto and asparagus, front and back. (Leave at least 1 inch between bundles on baking sheet.)
- Sprinkle freshly ground black pepper over each bundle.
- Sprinkle each bundle with a little parmesan.
- Bake in preheated 425 degree F oven for 15 to 20 minutes. Serve immediately or keep warm until served. Cover and refrigerate leftovers.
