Prize Winning Gingerbread Cake image

This recipe hails from a farmers wives cookbook.The recipe says it makes the whole house smell good while it's baking and that it is a "prize winning cake." You will see that it certainly does make the house smell good!And it is a hearty,good and easy cake!Serve with a dollup of whipped cream...or some people like to make a lemon...

2 1/2 c flour
1 tsp each of: baking powder,salt,and ginger
2 tsp cinnamon
1/2 tsp cloves
1/2 c margerine or shortening
1/2 c sugar
3/4 tsp baking soda
1 c dark molasses
2 eggs
1 c hot water

Steps:

  • 1. Preheat oven to 350.Grease and flour an 8inch square baking pan.
  • 2. Sift flour,baking powder,baking soda and the spices together.Set aside,
  • 3. Cream the shortening and sugar.Add and stir in **molasses.Add eggs and beat well.
  • 4. Stir in 1/2 of dry ingredients,add the hot water and stir it in.Then add the remaining dry ingredients.Beat all by hand maybe 30 seconds.
  • 5. Spread evenly into the prepared square baking pan. Bake for 45min's. **To help molasses come out of a measuring cup,either spray with a Pam type spray first or even put hot water in the cup first to warm the cup.Either way,the molasses will slide right out!
